Super Bowl XLI, Here we Come!

Sweet Super Bowl Salsa

  • Suitable through Stage IV Hard to watch football without salsa? This is a delicious sweet pepper salsa. It does not contain hot peppers, but has enough zing to taste great at parties or as a snack. Our daughter Sarah created it for the 1997 Super Bowl, featuring the Green Bay Packers (hence the green and yellow peppers), and recommends it for kids who don't like spicy foods but like to eat salsa. Unfortunately, it may be a long time before the Packers play in the Super Bowl, but you can still enjoy the delicious salsa!
    • 1/3 green bell pepper
    • 1/3 yellow bell pepper
    • 1/3 sweet red bell pepper
    • 3 plum tomatoes
    • 1 large clove garlic
    • 1-1/2 tsp. dried oregano
    • salt to taste
    • 1/2 c. water
    • 2 T. freshly squeezed lemon juice

    Chop the peppers and tomatoes. Mince the garlic. Place all ingredients in a one quart pot. Heat to boiling, then reduce to simmer. Let the mixture cook at least half an hour, until the peppers are soft. Remove from heat. If you just can't wait, enjoy the salsa right away. But the flavors will mingle and deepen if you chill the salsa an hour or two before serving. Makes about one and a half cups.
